"Herbal Hard Candy:
Ingredients:
3 cups strong herbal tea or decoction of your creation
3 1/2 pounds of granulated sugar (about 8 cups)
Preparation:
- Mix sugar and brewed herbal tea in large saucepan. It is best to use the biggest pan possible, as the mixture foams up and could easily overflow.
- Boil until the mixture reaches 292 degrees (be sure to make adjustments for altitude).
- Pour into large, shallow buttered pan and let cool.
- Cut into pieces before the syrup hardens all the way. If you want a softer, chewier candy you can pull it like taffy.
