Autumn Recipes

"Herbal Hard Candy:

Ingredients:
3 cups strong herbal tea or decoction of your creation
3 1/2 pounds of granulated sugar (about 8 cups)

Preparation:
  1. Mix sugar and brewed herbal tea in large saucepan. It is best to use the biggest pan possible, as the mixture foams up and could easily overflow.
  2. Boil until the mixture reaches 292 degrees (be sure to make adjustments for altitude).
  3. Pour into large, shallow buttered pan and let cool.
  4. Cut into pieces before the syrup hardens all the way. If you want a softer, chewier candy you can pull it like taffy.
